Пищевая ценность молока кобылы (Equus caballus), ослицы (Equus asinus) и зебры (Equus burchelli)
Abstract
В аналитическом обзоре изложены исследования зарубежных авторов относительно химического состава молока кобыл, ослиц и зебры, энергетической ценности молока разных видов животных, в т.ч коз. Отражены казеиновые комплексы протеинов молока, аминокислотный состав молока, молочные липиды и минеральные вещества этих видов животных.
