NORMATIVE REGULATION OF THE SAFETY AND QUALITY OF SNAIL MEAT
Abstract
The urgency of this work is that to date, the issues of quality
control and safety and veterinary and sanitary assessment of snails used for
the purpose of human nutrition and the production of medicinal products are
not fully resolved in the country. Regrettably, in today's Ukraine, there are no
Gosstandards in this direction. Therefore, we examined the world regulatory
framework for veterinary and sanitary examination of meat of edible species of
snails. Material and methods. Processed materials of the following normative
documents: The rules for the human consumption are defined in paragraph 6.2
of Annex I of Regulation (EC) No. 853 as Muller, Helix lucorum and species of
the family Achatinidae, Regulation (EC) No 854 of the Еuropean Рarliament
and of the council; Regulation on veterinary and sanitary requirements,
general and special requirements for hygiene of food products of animal origin
and hygienic requirements for food products of animal origin. No25/11 Republic
of Serbia; Veterinary and sanitary rules for the production of meat and other
food products from grape snails and other mollusks, harvesting, transportation
of grape snails. Resolution of the Ministry of Agriculture and Food of the
Republic of Belarus on 7 March, 13 No. 13; Philippine National Pns/Bafps
89:2011 Standard ICS 67.120.30 Live and raw bivalve mollusks.
In the normative documents considered by us, only the requirements for
the territory, domestic, industrial and auxiliary premises, technological
processes, equipment, inventory, raw materials, auxiliary materials, packing,
transportation of snails, labeling, storage conditions, disinsection, disinfection,
disinfection, organization of production control.
The prospect of our research will justify a set of indicators of veterinary
and sanitary expertise and develop a system for controlling the safety and
quality of snail meat. In Ukraine, there is an urgent need to develop rules for
veterinary and sanitary examination of meat of edible snails.
