Abstract

Висвітлено результати щодо впливу післязбиральної обробки грибів перериці двоспорової штамів ІБК-25 та ІБК-15 СО2 у концентрації 20%. З’ясовано оптимальний режим обробки грибів СО2  та визначено її вплив на органолептичні показники і вихід товарної продукції
