ВИДОВІ, СОРТОВІ, ТРОФІЧНІ ОСОБЛИВОСТІ ФОРМУВАННЯ ФРАК-ЦІЙНОГО СКЛАДУ БІЛКІВ ЗЕРНА ОЗИМИХ ЗЕРНОВИХ КУЛЬТУР

Abstract

Висвітлено результати досліджень щодо особливостей фракційного складу білків зерна озимих зернових культур. Установлено видову й сортову специфіку фракційного складу білків пшениці озимої, жита озимого, тритикале озимого. Доведено, що диференційоване застосування білків азоту сприяє збільшенню вмісту клейковиноутворючих фракцій. Вміст біологічно цінних фракцій альбумінів та глобулінів вищий у зерні жита та тритикале, а також за вирощування зернових культур із застосуванням низьких норм добрив або без них.
