ВПЛИВ ВІКУ ЗАБОЮ БИЧКІВ УКРАЇНСЬКОЇ М’ЯСНОЇ ПОРОДИ НА ЇХ М’ЯСНУ ПРОДУКТИВНІСТЬ

Abstract

Вивчено забійні показники бичків української м’ясної породи залежно від їх віку. З’ясовано, що у них найвищі забійний вихід, вихід туші, м’якуша вищого і першого сортів є у 22 – місячному віці. Вміст внутрішнього жиру, сухожилок та зв’язок, м’якуша вищого і першого сортів з віком мають тенденцію до збільшення. Чистий приріст бичків зі збільшенням віку забою знижується.
