Значення аналізу ризиків у ланцюзі виробництва безпечних і якісних харчових продуктів
Abstract
Наведено необхідність проведення аналізу ризиків − від ідентифікації небезпеки до повідомлення про нього. Охарактеризовано значення аналізу біологічних ризиків (ризиків зоонозів) як одного із актуальних завдань сучасної ветеринарної медицини для забезпечення ланцюга виробництва безпечних харчових продуктів тваринного походження в Україні. Аналіз ризиків, ідентифікація небезпеки, оцінка ризику, контроль ризиків, повідомлення про ризик, харчовий ланцюг виробництва, якість, безпека.
