Загальне бактеріальне обсіменіння молока - один з основних показників його якості
Abstract
Наведено результати досліджень мікробіологічногго обсіменіння молока корів, залежно від умов його отримання та сезонів року. Вивчено обсіменіння молока мезофільними, психротрофними, спороутворюючими мікроорганізмами та бактеріями групи кишкових паличок. Встановлено, що найбільша кількість психротрофних мікроорганізмів у молоці корів з особистих селянських господарств взимку та навесні, а найбільша кількість спороутворюючих мікроорганізмів – влітку.
