Integrated system of management by quality and safety of foodstuffs

Основною тенденцією розвитку світової економіки є інтенсифікація та раціоналізація виробництва в умовах мінімального тиску на довкілля супроводжувана гарантуванням безпечності виробленої продукції для життя і здоров’я і споживача, і зайнятого його виробленням персоналу. Найбільш перспективним способом управління діяльністю підприємства в таких умовах є реалізація на ньому «інтегрованої» системи менеджменту базованої для визнання належної кваліфікації суб’єкта на міжнародній арені на нормах відповідних міжнародних стандартів. Зважаючи на подібність структур відповідних нормативних документів, за основу системи запропоновано використовувати норми міжнародного стандарту якості ISO 9001 і доповнити її положення нормами стандартів захисту довкілля ISO 14001, гарантування безпечності харчової продукції ISO 22000 та гарантування безпечних та здорових умов праці персоналу OHSAS 18001. За результатами проведених досліджень на прикладі м’ясопереробного підприємства запропонована базова структура системи вироблення, яка при тому може бути рекомендована як шаблон при розробленні системи управління виробленням будь-якої продукції харчового призначення, а також показані переваги, що досягаються при впровадженні інтегрованої системи менеджменту.
